Crockpot Apple Cinnamon Oatmeal

A few days ago, it was National Apple Day, and it encouraged me to cook something fall-inspired with apples, and branch out from all the pumpkin flavors I’ve been prioritizing so far this fall. This crockpot apple cinnamon oatmeal recipe is packed with the delicious spiced apple flavors of fall. Apples and oatmeal are both great sources of fiber, vitamins, and minerals for a nutrient dense way to start your day. 

Crockpot oatmeal is a great, easy dish to prepare for a brunch, or to bring with you to a party this fall because the crockpot makes it super easy to prepare and transport if needed. I also like crockpot recipes for meal prepping because it saves time by throwing ingredients together and letting the crockpot do the rest of the work, so I’m not cooking in the kitchen for hours.  This crockpot apple cinnamon oatmeal recipe is a great way to save some time in the mornings by having my breakfasts ready to reheat and enjoy!

If you plan to use this for meal planning and eating over several days, I recommend storing in individual portioned mason jars or Tupperware, so you can add milk to that portion when reheating to get the desired consistency. I would also consider stopping the slow cooker early since you’ll be reheating it when you’re ready to eat in the days ahead. Another option, is to just make the spiced apples in the slow cooker, and make your oatmeal fresh each morning and top it with the crockpot apples. I’m also a big fan of adding nuts and chia seeds for some crunch to diversify the texture, so feel free to make it your own.

Crockpot Apple Cinnamon Oatmeal

Crockpot Apple Cinnamon Oatmeal

This easy breakfast recipe is a crowd pleaser, with warm fall flavors perfect for a group gathering or meal prep!

Ingredients

  • 3 Large Apples, diced
  • 2 cups Old-Fashioned Rolled Oats (or steel-cut oats)
  • 4 cups of Milk of your choice (I used soy milk)
  • 3 teaspoons Ground Cinnamon
  • 1 teaspoon Ground Nutmeg
  • 1 teaspoon Pumpkin Pie Spice
  • 1/4 cup Maple Syrup

Instructions

  1. Spray your crockpot or slow cooker with cooking spray to prevent the oatmeal from sticking
  2. Dice your apples in equal size pieces and add to the crockpot followed by the Cinnamon, Nutmeg, and Pumpkin Pie Spice. Stirring to coat the apples in spices
  3. Add the old-fashioned rolled oats to the crockpot followed by the milk and maple syrup. Stir to combine, and place the lid on your crockpot
  4. Set your crockpot to 'High' for 4 hours, stir and enjoy!

Notes

  • To prevent the oatmeal from sticking, give the oatmeal a stir a few times during the 4 hours, and watch the consistency towards the end of the cooking time as crockpots may vary
  • Store leftovers in an airtight container for up to 4 days. To reheat, add milk and reheat in the crockpot or microwave to desired consistency
  • If you do not have all of the spices, feel free to leave out or substitute with what you have on hand (even just apples and cinnamon taste delicious)
